I've been using the Java console to connect to the camera, and webcamsat to archive the image into video. I was wondering if there was a way to collect video from both cameras simultaneously?

Not if you are running in stereo mode and transmitting the video signal through the same Matchport. I suppose there could be a special firmware written that could do this but you would need to find your own developer to do this and absorb all the costs yourself as this is not something I would pursue.
 
If you are not running in stereo mode you could add a separate Matchport to the second camera and have each on their own IP. Then it is just a matter of running two separate recorders (as if the two cameras were on completely separate robots).
